cacao, fennel and a hint of thyme. Finishes
velvety with peppery dregs.

Winemaking
100% Hand-picked fruit sourced from Red
Mountain.
Punched down twice daily for 9 days in open
top fermenters.
Barrel aged in 75% neutral and 25% new oak.
Unfiltered for maximum flavor profile
